(a little) Sunday Supper

Sunday Suppers have fallen by the way side lately… but I’ve recommitted to bringing you guys the full shenanigans… soon. Until then, here’s a fantastic little recipe from Jamie Oliver (of course.) I’m not usually a tomatoes + fish fan, but this dish was delicious, and healthy, too! We adapted one of Jamie’s 20 Minute Meals from his iPhone app (our go-to app for simple, delicious weeknight meals), and used Trout instead of Cod to create a riff off of Jamie’s Spicy Cod with Lemon Zucchini Couscous. We paired it with a crisp Sauvignon Blanc to spend another perfect evening in the back yard. It’s very simple really – just cook your couscous, then slice zucchini with a veggie peeler and cover the zucchini and the cooked couscous with saran wrap so the zucchini steams. Then cook your fish in a can of crushed tomatoes, adding spices as you see fit. Squeeze a lemon onto your couscous and zucchini, adding a bit of lemon zest for kick.  Using a large spoon, place the fish + tomatoes on top of the couscous, and garnish with cilantro. So good, and so good for you!

Another Sunday Supper on the grill. I’m loving the gorgeous spring weather we’re having! Crossing my fingers that the fog will stay away for a long, long time. (Personally, I’m fine with never.)
